Tap stop and the recording is on your phone before anything touches the network. It uploads when it can, it is transcribed, and it lands on the event as a note with the words in it. That is the floor: whatever happens next, whoever was holding the phone, the note exists, timestamped, on the right event.
A browser's own recogniser hears 'Rosewood Barn' as 'rose wood bar' and 'delice' as 'the lease', because it has never met them. The speech model is told your catalogue, your venues, your staff and your recent clients before it listens, so the transcript reads like you wrote it. It comes back in the language you spoke. Fix anything it misheard in the box before Maître reads it.
Maître reads the note with the same tools it uses in chat: the event, the seating plan, the catalogue, the staff. It proposes concrete changes, one card each, said in plain words: 'Guest count 180 to 186', 'Task: call the barn, for Sam, due tomorrow', 'Add House Red × 6'. Turn off the ones that are wrong, tap Apply, and each runs through the same path a button press does, with your name and 'via Maître' on it in the activity feed.
Each voice note becomes a conversation in Maître's history, with the transcript as your message and the proposals as its reply. Open it in chat and carry on: 'actually make that seven bottles'.
