Beef-and-fish weddings still need to know that table 3 has a celiac, table 7 has two vegans, and the bride's grandmother is allergic to shellfish. Per-guest dietary tags follow the guest across re-seats and feed the kitchen prep summary so the line knows exactly how many vegan plates by station.
